So if you’ll be near Carrollton, Texas, in the Dallas area, on September 8, 2012, and you have a bib handy, stop by the 2nd Annual Steve Mayberry Memorial Cookoff at McInnish Park, 2335 Sandy Lake Road. Gates and the silent auction open to the public at 10 am. Judging, tasting and other activities last throughout the day and the awards ceremony begins at 4pm.
The cookoff honors Steve Mayberry’s battle with colorectal cancer and commemorates his favorite past time: cooking and eating barbecue. “That was the one thing he loved to do, attend and compete in barbecue cookoffs,” said Suzan Mayberry, Steve’s wife of 26 years. He was diagnosed with Stage IV colorectal cancer in September 2009 and died just six months later, in March 2010.
It was only during Steve’s last days that his family suspected that his colorectal cancer was caused by Lynch syndrome, an inherited genetic mutation that can affect families. Individuals with Lynch Syndrome have a 60 to 80 percent chance of developing colorectal cancer in their lifetime. Individuals may also have a higher risk of developing other Lynch-related cancers, including ovarian, uterine, kidney, gastric renal and skin cancers.
“For 25 years he had been going to the doctor to get colonoscopies and nobody thought about testing him for Lynch,” Suzan said. ”He would have been screened every year, instead of every three to five years. That was unbelievable. With such a strong family history of cancer, it took him dying to hone in on Lynch. So that’s my motivation.”
Last year’s cookoff raised $10,000 toward colorectal cancer education and awareness. This year, the goal is $15,000. Cash prizes will be given away for the best barbecue entries, along with a raffle for a free colonoscopy, a life-saving screening that can cost from $2,000 to $3,000. Suzan said she aims to include something in the event for every member of the family, including games and activities for children.
And ultimately, she hopes that during the fun, food, and games, families will get the message and get screened for colorectal cancer and Lynch Syndrome. ”For those that will listen, I have to know that I did everything I could,” Suzan said. ”That mutation has only been discovered in our lifetime and when it’s full faced in your family with so many dying, it’s an easy fix to know that you need to be screened every year.”

- 3 Tbs Paprika
- 2 Tbs Salt
- 2 Tbs Parsley-Dried, all spices are dried
- 2 Tsp Onion powder
- 2 Tsp Garlic powder
- 1 Tsp Black pepper
- 1 Tsp Oregano
- 1 Tsp Basil
- 1 Tsp Thyme
- 1 Tsp Cayenne pepper
- ½ Tsp Celery salt
Mix all of the above and use as a dry rub on beef, pork, sea food, and chicken.
